Pesto Chicken Sandwich on Sourdough



A delightful sandwich featuring grilled chicken coated in flavorful pesto sauce, paired with fresh spinach, juicy tomatoes, and gooey mozzarella cheese, all sandwiched between slices of toasted sourdough bread.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/4 cup pesto sauce
  • 4 slices sourdough bread
  • 1 cup baby spinach leaves
  • 1 tomato, sliced
  • 4 slices mozzarella cheese
  • 2 tablespoons olive oil

Instructions:

Set the grill or grill pan over medium-high heat to get it hot

Add salt and pepper to the chicken breasts

Spread pesto sauce on both sides of the chicken breasts

Chicken should be cooked all the way through after being grilled for 6 to 7 minutes on each side

While the chicken is cooking, toast the sourdough bread slices a little

Take the chicken off the grill when it's done and let it rest for a few minutes

Put spinach leaves, tomato slices, grilled chicken, and mozzarella cheese between the sourdough slices to make sandwiches

Pour olive oil over the sandwiches that have been put together

Put the sandwiches back on the grill or grill pan and cook for two to three minutes on each side, until the bread is golden brown and the cheese melts

Enjoy while hot!
