Vegan Gyros



This vegan version of gyros replaces traditional meat with flavorful and crispy baked tofu, making it a satisfying and delicious plant-based meal.

Ingredients:

  • 1 block extra firm tofu, pressed and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 pita bread rounds
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • Vegan tzatziki sauce for serving

Instructions:

Preheat oven to 400F 200C

In a bowl, mix olive oil, smoked paprika, garlic powder, oregano, cumin, salt, and pepper

Coat tofu slices with the spice mixture and place on a baking sheet

Bake tofu for 20-25 minutes, flipping halfway through, until crispy and golden brown

Warm pita bread in the oven for a few minutes

Assemble gyros by placing lettuce, tomatoes, red onion, and baked tofu on each warmed pita bread

Drizzle with vegan tzatziki sauce

Fold the pita over the filling and serve immediately
