Low Carb Zuppa Toscana
This is a hearty and tasty low-carb version of the traditional Zuppa Toscana soup. Instead of potatoes, it uses cauliflower and spinach. Great for a warm meal on a cold day.
Ingredients:
- 1 lb Italian sausage
- 4 cups cauliflower florets
- 4 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1 cup heavy cream
- 2 cups spinach, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for garnish optional
Instructions:
Over medium-low heat, cook the Italian sausage in a large pot until it turns brown and is fully cooked
Put minced garlic and diced onion in the pot
Cook until the onion turns clear
Add the red pepper flakes, chicken broth, and cauliflower florets and mix them in
Bring to a boil, then lower the heat and let it cook for 15 to 20 minutes, until the cauliflower is soft
Add the heavy cream and chopped spinach, then cook for five more minutes
Add pepper and salt to taste
If you want, you can serve it hot with grated Parmesan cheese on top
